You really can make a whole bunch of different flavor combos! Our goto breakfast burrito recipe is just eggs, potatoes and sausage (don’t forget the cheese), but sometimes I like to mix it up and add in all kinds of yummy extras, like spinach and onions! Depending on how much time you have, you can combine a bunch of different ingredients. The quickest to cook up are eggs and veggies, but if you are making a a big batch of breakfast burritos, think about adding more items to fill each burrito with more tasty goodness!
Breakfast Burrito Recipe
Quick, easy AND healthy breakfast ideas seem to be hard to come by in my house some days. The kids always head to the pantry to dig out cereal or Nutella (which we love), but sometimes I wish they’d put more veggies or protein in their bodies. So I like to make breakfast burritos and freeze them so the kids can just grab one, heat it up and go. We also love to eat breakfast for dinner some days, so this breakfast burrito is perfect!
- 1-2 tbsp butter
- 5 eggs
- 1/4 cup milk
- 1/2 lb of sausage cooked crumbled or cut into bite sized pieces
- 1/4 cup onion chopped
- 1/4 tomatoes diced
- 1/2 cup spinach chopped
- 1/2 cup mushrooms chopped
- fresh herbs to taste
- Tortillas (I use the 9″ flour tortillas)
- 2 cups grated cheese (we used colby jack, cheddar would be yummy too)
