Make Easy Breakfast Burritos
I love to make breakfast recipes and they are my favorite foods to eat, however, mornings are not my favorite. So, short of having breakfast for dinner all the time… creating yummy food for breakfast ahead of time works really well in our house. I like to make up a big batch of these breakfast burritos, freezing them and then we can reheat them and enjoy any time we want. Making all these burritos ahead of time also helps out with those mornings that we just don't have time to cook a proper meal. I'd rather have homemade food than pre-packaged store bought items when we can make it happen.
Classic Eggs and Sausage Breakfast burritos
Ingredients to make breakfast burritos
- 5-6 Eggs
- 1 package Sausage
- 3 medium Potatoes
- 1 cup Cheese – this is an estimate, use more or less how you'd like
- Tortillas – I use the standard/medium sized tortillas
How to make breakfast burritos
- Cook potatoes. Poke potatoes with a fork, cook in microwave on high for 4 minutes or so, cook until slightly soft. Set aside.
- In a large skillet, brown the sausage, drain and set aside for later.
- Scramble eggs. Add sausage back into the pan. Cut potatoes into cubes and add to skillet mixture. Add any additional seasoning.
- Add a few spoonfuls of egg and sausage mixture to a tortilla. Top with shredded cheese. Fold. Wrap with plastic wrap and store.

Hi! I’m assuming bacon will work just the same as sausage? Can’t wait for this. I make homemade salsa and love breakfast burritos with salsa.
I think bacon would be amazing! Did you try it out? For bacon, I would cook up the bacon by itself first, and then add the other ingredients to it so that the mixture soaks up that yummy bacon flavor but you get crispy bites of bacon too.
Approximately how many burritos does this recipe make?
I can usually get about 6 burritos made with this, but just add more eggs and sausage for more burritos. (Or use smaller tortillas) Enjoy!
Y’all I just made this yesterday for my husband because he’s always buying gas station food for breakfast ? and MY GOD! ? y’all I did everything the same but added diced onions, diced green pepper, diced red pepper and a can of rotel with the green chiles in it and I got 16 burritos! Monay! ? I snagged some this morning to try and… They are to die for. ? try em! It’s worth the extra effort.

How long do they keep in the freezer
Ours don’t last very long because my boys eat them up pretty quick, but I think 1-2 weeks in the freezer would definitely work!

2keep warm for an outing: Heat up your empty cooler with heating pads or heated dry towels. Fill up cooler with space for your burritos.. … container or stored in a plastic bag.. they will stay safely warm up to 4 hours.

Would parchment paper be a happy medium between the plastic and foil? I’m nervous with the kids microwaving plastic wrap. Does it not melt?

Hi Chanda, Parchment paper might work, but it’s more difficult to hold in place for a burrito. (Unless you have a trick you’d like to share!). I use the Press And Seal plastic wrap. It doesn’t melt at all, just be careful or steam while unwrapping. Let me know how that works.
Hi great idea can you eat these cold like if taken in a lunch cooler then eaten. I don’t mind cold stuff I wrap everything for lunches
Great idea! I don’t mind cold food either… especially if it’s got some great flavor. You could add all your favorite spices to make them extra delicious.

We make this almost exactly like you except we use diced potatoes in a can and we add a can of Rotel and jalapeno pepper just to give it a little kick.

These were excellent. I used veggie sausage as I’m a vegetarian. Also my son suggested we drizzle maple syrup when the eggs were just about done. That worked great. Thank you for a new easy breakfast for a very busy family.

I love this idea! when we used to live in Arizona we would drive to the base near Yuma and for lunch we always got a breakfast burrito made much the same way you are describing. they were sooooooooooo good!

Every time I try this the tortillas split (flour) and the whole thing is ruined…I’ve tried using less and less filling, but the tortillas still keep splitting. Any ideas? Can’t wait to try your recipes. Thank you.
Hi! I’m sorry the tortillas are giving you a hard time. A couple things to try: 1. make sure you are using flour tortillas. Flour tortillas tend to be the softest and bend the easiest. 2. Heat up the tortillas a bit to make sure they don’t crack. I place the tortillas between two damp paper towels and heat in the microwave for maybe 15 seconds. Let me know how these tips work for you!

Can I ask what kind of sausage you recommend using? last time I used actual sausage links and cut them up, the chunks were a little bigger than I would like, do you have any suggestions??
Hi Mollie, I am so glad you like this recipe. It’s definitely an easy to make family favorite around here! I usually use Jimmy Dean pork sausage. Sometimes I get the Maple sausage, that’s usually our favorite.
PS – if you use sausage links, I would just cut them up smaller or smash them as you cook them so they are more like ground meat.
Hello, I was wondering if you have tried to warm them any other way besides a microwave or if anyone else has ? Only asking because my microwave died and I have not gotten another.
Hi! You should be able to head them up in the oven or a toast oven. I would wrap them in aluminum foil and then heat for maybe 15 to 20 minutes at about 350. I haven’t personally heated them up that way… but I do cook up regular burritos in the oven all the time. Let me know how it goes!
Do you let them cool before putting everything onto the shell? I feel like they will make the shell soggy if added when warm??
I do not let the filling cool… by putting the filling in the tortilla right away, the cheese melts nicely. That said, I use flour tortillas, not corn. Also, if you’re worried about soggy burritos, make sure to use a slotted spoon to scoop out the filling so any juices will drain before adding to the tortilla.
What is your average yield with the 5-6 eggs and 10″ tortillas? Are you using a one pound package of sausage? Thanks!!
Hi Amy, I’m going to have to get back to you on this. I’m going to say about 8-10 burritos. I’m completely guessing here… the last batch I made I used the smaller tortillas and over stuffed them. I ended up with about 10 in that round. I’ll report back next time I make them, great question, thank you!

Great question! I’ve updated the recipe with some measurements. You can adjust the quantities to fit your own liking, but I suggest 5-6 eggs and 3-4 medium potatoes. I use red potatoes because then I don’t have to take the skin off.
Great ideas. The only negative is that you are not doing people any favors by recommending plastic wrap in the microwave with the food. The chemicals from the plastic are leaching into your family’s food……just because products say microwave safe, doesn’t mean they do not have chemicals. Use unbleached paper towels that are dampened slightly for the best result when heating frozen burritos. Also don’t put hot or warm food in plastic containers. Best to just buy glass and get used to it.

Chemicals? Leaching into food? Plastic wrap is easy and microwave safe (emphasis on safe and everything has chemicals).
Don’t make someone feel guilty or less than for trying to make their life easier and glass containers are not cheap!!
I am sure if they didn’t use the right paper towels you would say something negative about that.

I don’t use much seasoning. Because I cooke up the sausage and the eggs, the sausage adds most of the flavor. You can add in most any extra seasoning you’d like.. spicy or a little bit of salt.. or salsa would be delicious.
What size tortilla’s do you use?

Hi! I reheat them for 45 seconds at a time. All depends on your microwave, so play with that a bit. If they are frozen, they should last a couple weeks.
How long do they keep in the freezer??
I don’t know for sure as we tend to eat them the week I make them. A couple weeks at least.. my husband said “oh yeah, 4 or 5 weeks EASY!”. 😀

How do you keep them from getting soggy when you reheat them?
Hi Rachel, they stay soft when I reheat them. If you find they are getting soggy, leave a little space open in the plastic wrap, or try unwrapping completely, place on a plate and cover with the plastic wrap. This would leave a little more air around each burrito, allowing it to stay dry. Let me know how that works out. Another option is to remove the plastic and wrap in a paper towel before heating. 😀
How would you reheat them after being frozen?
I just pop them in the microwave for 1-2 minutes… keep them wrapped in plastic wrap to keep the moisture in. I prefer the Press n Seal plastic wrap, it’s more sturdy, but you could also put in a microwave safe dish, covered.
The plastic wrap doesn’t melt onto the tortilla?
Not in the microwave, my plastic wrap didn’t melt. But, if you want to be safe, unwrap and then wrap with a paper towel. I also like to use Press n Seal which works great in the microwave.
