Let’s talk about Quick and Delicious Breakfast Ideas, shall we? Breakfast is my favorite meal of the day. I can usually do quick and delicious but creating low sugar breakfast foods can often times be a little more difficult. Breakfast food is delicious and it’s fun to make. Hello pancakes and syrup or crepes with cherry sauce. However, I really perfer my favorite breakfast recipes with a lower sugar alternative. YES it can be done! So when I was asked to get involved and share ideas with the Truvia® Natural Sweetener Better Breakfast campaign, I had to jump in… breakfast bowl ready to go!  So today I’m sharing a quick and delicious breakfast idea sweetened with Truvia® Natural Sweetener Spoonable that you can make in about 40 minutes. Or make ahead, heat up and enjoy in minutes.

Let me also mention, I personally am trying to find ways to cut down on sugar. I love sweets… all kinds of sweets. Even my coffee, I love coffee, but not black. About a year ago I switched from sugar to Truvia® in my coffee and haven’t looked back! For today’s breakfast we have Homemade Mocha, Banana Blueberry Oat Muffins and a side of fresh fruit.  Feel free to toss in an egg and bacon if you’re really hungry and looking for a bigger meal. I’ll share each recipe separately below. Let’s start with a yummy mocha.

Now keep in mind, if you are realllly counting your sugar intake, keep in mind, the fruits in this meal have their own sugars. But you won’t be adding refined sugar, so there’s your giant win!

Homemade Mocha

You can make this Homemade Mocha Recipe in about 5 minutes or less.

Ingredients

  • 1/2-1 tsp Truvia® Natural Sweetener Spoonable
  • 1/2-1 tsp Cocao powder (you could use pure cocoa powder if you prefer)
  • Coffee

Instructions

  1. Brew your cup of coffee as per your usual method.
  2. Stir in cocao and Truvia® Natural Sweetener Spoonable
  3. Enjoy

Feel free to adjust the amounts of cocao and Truvia® Natural Sweetener Spoonable to taste. I tend to like my mocha a little more chocolately and some. You can also add a little touch of milk or cream if you’d like.

Optional: top with whipped cream and a sprinkle of cocao.

Homemade Banana Blueberry Oat Muffins

I love the combination of banana and blueberry  for these muffins. This is my banana bread recipe adapted to use Truvia® Natural Sweetener instead of refined sugar. You can also make them without the blueberries or your own favorite berries.

Ingredients

  • 1 Cup Flour
  • 1/2 Cut Rolled Oats
  • 1/3 Cup Truvia® Natural Sweetener Spoonable
  • 2 Tsp Baking Soda
  • 1/2 Tsp Baking Powder
  • 1/2 Tsp Cinnamon
  • 2 eggs
  • 2 Medium Bananas, mashed
  • 2 Tsp Milk
  • 1/3 Cup Blueberries
  • Crushed walnuts (optional)

Instructions

  1. Mix all the dry ingredients.
  2. In a separate bowl, mix all the wet ingredients.
  3. Combine the dry ingredients with the wet ingredients, mixing in one cup at a time.
  4. Gently stir in the blueberries.
  5. Spoon batter into a muffin pan. I use a Demarle Flexipan so I don’t need to grease the muffin tin. Make sure you use the appropriate supplies or ingredients for your bakeware.
  6. Sprinkle a few oats, crushed walnuts and cinnamon on top of each unbaked muffin.
  7. Bake at 350 degrees for about 30-35 minutes.

Note: you can add a little more sweetener to your muffin batter. I prefer less sweet breakfast muffins, so start with 1/3 cup and add a little more if you prefer a sweeter treat. Keep in mind, the flavor does change a little as the muffins are baked.

    • Hi Barbara, I say try the frozen berries. They may end up being a little more squishy than fresh berries… but may taste just as great. Let me know how it works out!
