Asiago Cheese Bruschetta Bites

I love fancy little bite sized foods. I also love cheese…especially Artisan Cheese that I can grate myself on top of every dish I make. I really really love cheese. So when I was asked if I wanted to write about Stella® cheese, I don’t think I paused to think about it… I read “cheese” and that was that! Now combine this love of fancy bites with a love for cheese and that only inspires one thing… Bruschetta (actually ravioli fits the bill too, but I’m not making homemade pasta any time soon).  Bruschetta is one of those bite sized creations that seems like art to me. I also think it’s easy enough for anyone to make yet looks amazing and tastes even better! The secret is in the toppings you pick. This is a perfect item to make for date night too – stay in and eat together!

These are more like fancy little pizza bites. They are grown up and sophisticated but you get to load up the toppings however you like. My husband and I made these together and then I ate most of them! Stella makes a delicious Asiago cheese, I could eat the whole wedge myself!

Stella® cheeses are flavorful and combine old world craftsmanship with rich dairy heritage, dating back to 1923. From shredded to crumbled and sharp to sweet, the wide range of Stella® cheese products will infuse your meals with a hint of romantic flavor that’s sure to wow your guests.

Ingredients you need:

All of the ingredients we used were fresh produce items (except the meat – which I grabbed from my local deli).

  • Stella® cheeses – Asiago – grated fresh
  • Other cheese – I also bought pre-grated 3 cheese mix. It doesn’t melt on the bruschetta the same as the asiago so I ended up using mostly just the asiago. You can add in other Artisan Cheeses such as parmesan, romano.. or another nice, sharp cheese. Stella’s have a great variety that we found right near the deli in our local grocery store.
  • Artisan bread – we used a mini baguette that I sliced at home
  • Prosciutto
  • Sliced mushrooms
  • Fresh Spinach – whole leaves
  • Sliced tomatoes
  • Red Onion – chopped
  • Fresh herbs – we used lemon thyme, rosemary and oregano
  • Chia seeds – optional – I just like how they look when added as a little topping/garnish

Make your own Asiago Cheese Bruschetta

  1. Slice the bread into 1/2″ slices and lay out on a cookie sheet. I like to line my cookie sheets with parchment paper – nothing sticks that way.
  2. Add a little Stella® Asiago cheese to the bread – as it melts, all the other ingredients will stick to the bread nicely. This is where the right cheese is important – you need the whole bite to stay together while you eat it.
  3. Layer on whichever toppings you like. I added extra cheese between ingredients, especially went I used a whole spinach leaf – again, just to make sure that the ingredients stayed in place on the bruschetta.
  4. Bake for about 8 minutes at 350 degrees.

Some of the flavor combinations we really loved:

  • Cheese, spinach, mushroom, cheese – sprinkle with chia seeds
  • Cheese, procuto, rosemary
  • Cheese, spinach, tomatoes, prosciutto, onions, cheese.
